Zucchini



Its that time of year again and I have zucchini in excess so that means lots of fried zucchini and zucchini bread. I thought I'd share a favorite zucchini recipe with you.

Italian pasta Stir-Fry
8 ounces linguine, uncooked
2 medium tomatoes, seeded and chopped
1 medium onion, chopped
1 medium zucchini, sliced
1/4 c. fresh parsley, snipped
1 T. olive oil
2 garlic cloves, pressed
1 t. dried basil
1 t. dried oregano leaves
1/8 t. salt
1/8 t. pepper
1 ounce fresh parmesan cheese, grated

Cook linguine according to package directions. Drain and keep warm. Heat oil in stir fry skillet over medium heat until hot.Press garlic into skillet add onion and zucchini; stir fry 2-3 minutes. Add tomatoes, parsley and seasonings. Heat 1-2 minutes, stirring gently until heated through. Remove from heat. Stir in linguine. Add grated cheese. Serve immediately.
