Another Recipe

Cheeseburger Chowder

1/2# Ground Beef
3/4 c. chopped Onion
4 Tablespoons Butter, divided
2 Garlic Cloves
1 c. diced raw Carrots
1 tsp. Basil
1 tsp. Parsley
4 c. diced raw Potatoes
3 c. Chicken Broth
1/4 c. Flour
1 1/2 c. Evaporated Milk
2 c. cubed Velveeta Cheese
1/4 c. Sour Cream
1/4 tsp Salt
1/4 tsp. Pepper

Brown and drain ground beef:
Saute onion in 1 Tbls. Butter until tender. Add garlic, carrots, basil and parsley. Saute about 3 minutes. Add broth, ground beef and potatoes; Bring to a boil reduce heat and simmer for 15-20 minutes.
In a small skillet melt remaining butter add flour and cook stirring 3-5 minutes. gradually add evaporated milk stirring constantly for 3-5 minutes. Gradually Stir the sauce into the soup Bring to a boil cook for 2 minutes reduce heat to low. Add cheese and salt and pepper continue to stir until cheese melts. Remove from heat and blend in sour cream.
